Zalobiya / Fried Kurdish Pastry

Zalobiya, a classic fried Kurdish pastry, is prepared for special occasions and holidays and is traditionally served with a variety of jams or cheeses.

Ingredients

  • ½ kg (1 pound) all-purpose flour

  • ½ tablespoon active dry yeast

  • 2 tablespoons sugar

  • 1 teaspoon salt

  • ¾ cup canola oil, plus more for shaping and frying

  • 4 eggs

  • 1½ cup room temperature water

  • Garnish: jams, cheeses

Preparation

1. In the bowl of a stand mixer combine flour and yeast.  Add sugar, salt, oil, and eggs and mix with a spoon.  Slowly add water while stirring, just add enough until the dough comes together.  

2. Using the stand mixer, mix the dough for about 15 minutes.  Cover and set aside at room temperature for 20-30 minutes for the dough to rise. 

3. Heat oil half full in a deep pan until hot. 

4. Once the dough has doubled in size use a plate coated in oil to shape pieces of dough into a circles coated in oil. 

5. Flatten each circle with greased hands on another plate of oil and fry about 1 minute on each side for a light golden color and put in a strainer before serving with jams and/or cheeses.
