Veggie Black Bean Salad

This recipe is great because it's quick and the ingredients are interchangeable, you can use any combination of any leftover vegetables you have and it'll come out delicious every time.

  • ½ cup fresh lime juice
  • 1 tablespoon cumin
  • ¼ cup olive oil
  • ½ tablespoon garlic powder
  • 1 tablespoon agave syrup
  • Salt and pepper to taste

Black Bean Salad

  • 1 can black beans
  • 1 can baby corn or regular corn
  • ½ red onion
  • ½ red bell pepper
  • ½ yellow bell pepper
  • 1 poblano pepper (green)
  • ½ cup chopped cilantro


1. Combine dressing ingredients well.

2. Combine salad ingredients, and toss well with dressing. Can be made several hours in advance to let the flavors meld.
