This quick and delicious fresh jam recipe helps tp use up any last minute berries that you can't seem to gobble down before your next trip to the farmer's market.

Ingredients

  • 3 cups blueberries or mixed berries, fresh or frozen 

  • 1 cup sugar

  • 3 tablespoons lemon vodka

Preparation

1. Place fruit and sugar in a 12-inch sauté pan over medium-high heat and bring to a boil. Stir frequently as sugar dissolves and fruit begins to break down. Reduce heat to medium, add vodka and continue stirring while gently mashing berries. Cook for 5 to 7 minute more, stirring constantly until mix becomes thicker and syrup-like.

2. Remove from heat and pour into a small bowl set atop a larger bowl of ice water. Wait 30 to 44 seconds to allow jam to set. Cool to room temperature before serving, or cover tightly and refrigerate for up to 2 weeks.
