Dry Rubbed Double Cut Veal Chop for Two

  • 3 cup sweet potato puree
  • 1/3 cup sugar
  • pinch salt
  • 3 eggs
  • 1 vanilla bean
  • 1/2 cup pineapple juice
  • 1/2 cup matzah meal or potato starch


Preheat oven to 325⁰F.  Grease a baking dish.

In a large bowl, combine the sweet potato puree, sugar, salt, eggs, vanilla, and pineapple juice.

Fold in the matzah meal or potato starch. Pour into baking dish, cover with foil, and bake for 40-45 minutes.
