Sweet Potato Skins

This recipe takes the classic potato skin to another level of deliciousness and is filled with vitamins too.

  • 4 large sweet potatoes, scrubbed well with water
  • 1/2 cup crumbled blue cheese
  • 1/4 cup chopped pecans
  • 1 tablespoon oil to coat pan
  • 1/2 can chopped kale (optional)


Preheat oven to 400.

Place potatoes directly on baking sheet in the center of the oven.  Bake for 1 hour or until you can stick a fork all the way through. Remove from oven and let cool.

Cut in half, gently scoop out inside* leaving a thin layer of potato on skin.  Spread the oil on the pan and put the skins back on and in the oven for 15 minutes to brown.  Then stuff with kale if desired and then crumble cheese and pecans over top.  Bake again for 5 minutes until melted.


Can keep inside of skins to make mashed potatoes by mixing with a little olive oil. Salt to taste.

If you dont' like blue cheese, try this with cheddar for an equally fantastic treat.
