- 1 pound shredded cabbage or coleslaw blend
- 1 ripe mango, peeled, pitted and chopped
- 1/3 cup finely chopped red bell pepper
- 1/3 cup sliced green onion
- 1/3 cup light mayonnaise
- 3 tablespoon honey
- 3 tablespoon cider vinegar
- Salt and pepper to taste
Place cabbage, mango, bell pepper and green onion in a large bowl. Whisk together remaining ingredients and add to bowl; toss well to coat.
Best served within 1 hour.
