When you serve this super creamy cacao avocado mousse, you often wonder— to tell or not to tell? Kids love this treat, but some children (and adults) get turned off once they find out what the secret ingredient is, so it's up to you to announce or hide, whatever decision you make, you'll be happy you prepared it! And the best part is that it only takes 5 minutes.
Raw cacao is one of the most antioxidant-rich foods on the planet and gives it a deep chocolate flavor, plus the heart-friendly fats and fiber in avocado make this treat a great anytime option.
Make sure to choose the best avocados: you will have to use them when they are perfectly ripe: not when they are still hard (as they don't become smooth and creamy) nor when they've turned too soft (as the is flavor might be off), so plan accordingly.

- 2 ripe avocados, halved and pitted
- About 6 tablespoons (45 g) raw cacao powder
- 1/2 cup coconut milk
- 1/2 cup coconut nectar, pure maple syrup, raw honey, or xylithol (or a pinch of stevia)
- 1/2 vanilla bean, split and scraped or 1 teaspoon pure vanilla extract
- 1/4 to 1/2 teaspoon sea salt
Scoop out the flesh of the avocado, and place it a food processor. Add in the cacao powder, sweetener, vanilla and 1/4 teaspoon salt and process until completely pureed and aerated. No pieces of avocado should be visible, if there are any, turn processor off and scrape its walls with a silicone spatula. Process again, until completely creamy and smooth. Test the saltiness and add 1/4 teaspoon, if needed.
