Roasting beets brings out their natural earthy sweetness. Serve these as a pareve side dish with beef or chicken, use in a salad, or serve alongside our Over the Top Hummus Bar.

- 2 large red beets
- Kosher salt
- Extra virgin olive oil
1. Preheat oven 350°F.
2. Drizzle beets with evoo and sprinkle with salt. Wrap beets in foil and roast in preheated oven for 1 hour, or until can be easily pierced with a paring knife.
3. Cool, peel and dice. Transfer sliced beets to a serving platter. Serve a side dish or alongside our Over the Top Hummus Bar.
