NEVER throw away the greens from your beets, they are sooo good and so easy to prepare.

- 1 teaspoon olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 cup chopped beet greens
- 1 tablespoon toasted pine nuts (optional)
- 2 tablespoons raisins (optional)
1. Heat pan over medium high eat. Add olive oil.
2. Sautee onion and garlic until fragrant.
3. Add greens sauted until wilted.
4. Top with pine nuts and raisins if desired.
