Sabich Potato Bourekas

Sabich is a traditional Israeli breakfast sandwich usually made in a pita with eggs, tahini and eggplant. Usually served with the ever flavorful and pungent amba, pickled mango sauce.  

Our version uses potato borekas instead of pita for fun twist on the classic. Serve any time of day, they would make a great filling breakfast, lunch or fun appetizer.

Preparation

  1. Slice potato bourekas in half to create a pocket or sandwich.
  2. Stuff with eggplant, egg, tomato and parsley.
  3. Drizzle with tahini and/or amba, if desired.
