Dried fruits and nuts mixed with oats make the perfect granola for your breakfast, snack or any time.

- 4 cups rolled oats
- 2 cups sweetened shredded coconut
- 2 cups sliced almonds
- ¾ cup vegetable oil
- ½ cup honey
- ½ cup finely diced dried apricots
- 1 cup finely diced dried figs
- 1 cup dried cherries
- 1 cup dried cranberries
- 1 cup unsalted cashews, roasted
Preheat the oven to 350°F. Line a rimmed baking sheet.
Toss oats, coconut, and almonds together in a large bowl. In a small bowl, whisk together oil and honey, and pour over the oat mixture. Stir with a wooden spoon until all the oats and nuts are coated. Pour onto baking sheet. Bake, stirring occasionally with a spatula, until the mixture turns golden brown, about 45 minutes.
Remove the granola from the oven and allow to cool, stirring occasionally. Add apricots, figs, cherries, cranberries, and cashews. Mix well and let cool. Store in an airtight container.
