- 1 cup + 2 tablespoons water, room temperature
- 1/2 cup peanut butter, smooth or chunky
- 1/4 cup brown sugar, packed
- 1/2 cup peanut butter chips
- 2 tablespoons chopped peanuts (optional)
- 1 teaspoon salt
- 3 1/2 cups bread flour
- 1 tablespoon gluten flour (optional)
- 1 3/4 teaspoons bread machine or quick rise yeast*
1 Combine ingredients in your machine in the order given by the manufacturer.
2 Use a white or sweet dough cycle. As the dough is mixing, check to see if it needs additional water or flour. The dough should be slightly sticky, yet pull away from the sides of the pan.
3 When done, cool on a rack for 20 minutes and then slice and serve. Add jelly to make a PB&J treat or your favorite topping of butter, peanut butter or honey.
4 Optional method: Monkey Bread –
5 Pre-heat oven to 375°F.
6 Make dough in the dough cycle of your machine. Remove and cut into 16 equal portions. Roll into balls and place, smooth top down, in a greased loaf or bundt pan.
7 Let rise until double in size and then bake for 35 to 40 minutes. Cover with aluminum foil after 20 minutes to prevent a dark crust. (Tap lightly on bread to see if it sounds hollow and is golden brown.) Cool on rack 15 minutes and then serve.
8 Bread “balls” should be pulled off and not sliced.
9 * For high altitude, use 1½ tsp. Yeast
