You can use any variety of fruit that is in season.

- 6 peaches, peeled and sliced
- ¾ cup blueberries
- ½ cup sugar
- ½ lemon, juiced
- 2 cups Flour
- 1 ttablespoon baking powder
- Pinch salt
- ⅓ cup vegan butter or coconut oil, cold
- 1 egg
- ⅓ cup soymilk or almond milk
1 Preheat oven to 350°F.
2 Combine fruit, all but 2 tablespoons sugar and lemon in bowl, pour into baking dish.
3 Combine flour, baking powder, 2 tablespoons sugar and salt. Cut in the butter until crumbly.
4 Add 1 egg and milk, stir to combine. Spoon batter to cover fruit. Place in oven and cook until browned, about 1 hour.
5 Server with ice cream, whipped cream or I love it just as it is.
