Traditionally tzatziki, a great dip for veggies and chips is made with Greek yogurt. I have found that the tofutti sour cream makes an excellent substitute.
- 1 container non-dairy sour cream
- 1 cucumber, peeled and deseeded
- 1 tablespoon lemon juice (or more to taste)
- 1-2 cloves garlic
- 1/2 tablespoon chopped fresh dill or mint
Put sour cream in a medium sized bowl.
In a food processor, place cucumbers and dill and/or mint. Pulse a few times, then add garlic by grating it in and salt and pepper and lemon juice. Pulse until pureed.
Mix cucumber mixture into the sour cream and adjust seasoning to taste. Allow to sit in refrigerator at least 1 hour.
Works great with Zuchinni chips.
