Great for shabbat lunch starter, kiddush snack, good with a glass of Scotch.....

- 1 lb Fresh salmon Use firm, red salmon - not flaky, skin off middle
- 300 ml Tamari soy sauce
- 300 ml Vegetable oil
- 3 -4 tablespoon Black sesame seeds
- I bunch scallions
- dash Tabasco 'Smoky' (chipotle) flavour works best
Cut salmon into cubes. Mix soy and oil well, and refrigerate overnight with salmon in a Ziploc bag. Turn occasionally. When ready to serve, drain, pat salmon with kitchen paper. Sprinkle with sesame seeds generously. Cut scallions and sprinkle generously over salmon. Add one drop (or to taste) of Tabasco on each cube. Spear with cocktail sticks. Serve decoratively on glass dish with some salad greens. Warning: this is seriously addictive food. Make a lot!
