Yogurt is high in protein, calcium, and probiotics, which is great for your immune system. Combined with lentils and figs you get fiber and more vitamins and minerals.

1. Simmer lentils with bay leaf and garlic in 2 cups water in a small saucepan until tender and water has been absorbed. Toss with evoo, salt, and pepper
2. Heat a medium sauté pan, lightly coated with evoo, over medium-high heat. Sauté onion until dark brown, very soft, and fragrant.
3. Divided yogurt between serving bowls and arrange lentils, onion, and figs. Garnish with chopped parsley.
