We love Yerushalmi kugel, but it just never seems spicy enough. So I lightened the calories and sugar, and kicked up the heat. Put it in muffin tins for fun- and enjoy!

- 1/4 cup light margarine Smart Beat
- 3/4 cup agave nectar
- 2 tsp salt
- 4 1/4 cup water
- 1 1/2 tsp black pepper
- 1 1/2 tsp cayenne pepper put 1/2 in at a time, and taste for
- 2 egg or egg substitue
- 2 heaping tsp cinnamon
Preheat oven to 350 degrees.
Mix first 6 ingredients in pot, and bring to a boil. Taste the mix and see if you are comfortable with the level of spice, add the rest of the cayenne to your taste.
Stir in the noodles and remove from heat. Cover and let sit for 15 minutes.
Add egg and cinnamon, and stir very well. Spray 15-18 muffin cups with non-stick spray, and fill with noodle mixture.Press down with back of a spoon.
Bake for 50-55 minutes til done.
