Israeli Pearl Whole Wheat Couscous with Roasted Red Pepper

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 bag Osem whole wheat Israeli couscous
  • 1 roasted red pepper, diced
  • 1 cup water or vegetable broth
  • salt and pepper to taste
  • 1/4 cup pine nuts
  • 2 tablespoon chopped parsley


Heat large deep pan over moderate heat.  Sprinkle in some salt, and add olive oil.  Saute onions a few minutes until translucent.

Add couscous and toast for a few minutes.  Add pepper and broth.  Cover and simmer for 10 minutes.

Add salt and pepper to taste, serve in a bowl and sprinkle pine nuts and parsley.  Enjoy hot or cold.
