Carrots with a zing!! These are the best side dish that even work as a yummy snack any time.

- 1 pound fresh carrots
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup Barrow's Intense Ginger Liqueur
1. Pre-heat oven to 350F.
2. Cut fresh carrots into strips. Mix in a bowl with olive oil, salt, pepper. Roast in a pan at 350 degrees for approx. 15 minutes.
3. Pour 1/2 cup of Barrow’s Intense Ginger Liqueur over carrots and let it glaze in the oven until golden brown.
