- 1/4 cup fresh lime juice
- 2 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 garlic cloved
- 1/2 teaspoon grated ginger (optional)
- 1/4 teaspoon cumin
- 1/2 teaspoon salt and 1/2 teaspoon pepper
- 1/3 cup olive oil
In a deep bowl, whisk the lime juice, honey and Dijon. Grate in the garlic clove and optional ginger. Add cumin, salt and pepper and whisk well. Continue whisking while adding the oil in a thin stream, until well combined. Taste and adjust seasoning as desired.
You can also put all ingredients except oil in a glass jar, cover and shake. Then add the oil and shake again. Store dressing in a glass jar for about 2 weeks.
Drizzle dressing over salad greens with tomatoes, cucumbers, peppers and onions. You can serve as is or top with grilled fish.
