Use any herbs you have on hand for this corn spread. We especially love using basil for its fragrance and flavor. The secret to the bright green color is the blanching process. Use this oil to drizzle over pasta or fresh protein, or serve with toasted bread or challah with sea salt and freshly ground black pepper.

Ingredients

  • 2 cups fresh herbs such as basil, parsley,  chives, cilantro, tarragon, or mint
  • 1 cup extra virgin olive oil, such as Colavita

Preparation

1. Place herbs in simmering hot water for 30 seconds. Remove using colander or slotted spoon and place in a bowl of ice water.

2. Dry herbs on kitchen towel. Place in blender with olive oil and blend until smooth.
