Healthy Apple Crisp

The kitchen is my happy place. Its the place where warm memories are created.

Since I was a little girl I used to be by my mother’s side, helping her with any cooking. Whether it was peeling or cutting, I always had some sort of job to do. I learned from my mother a lot, and loved her passion for cooking, and watching her make food for those she loved. Her meals didn’t take much time, but the flavors were always there. She didn’t need a recipe to cook. Her hands just automatically knew what to do. People loved her dishes, and would always ask “how did you make this?” and her answer would always be the same. With her known golden smile, she would light up and say “the secret ingredient to any dish is making it with love”.

That line will always be ingrained in my heart, alongside the love and passion for food my Mother gave over to me.

In honor of her upcoming Yartzheit I am so happy to share one of her special recipes. This apple crisp is a healthier take on the classic. It is super simple to put together and will easily become one of your go-to desserts.

Ingredients

  • 5 large apples

  • 4 teaspoons sweetener (I use Truvia), divided

  • 2 teaspoons cinnamon, divided

  • 2 teaspoons vanilla extract

  • 2 cups almond flour

  • ½ cup ground walnuts

  • ½ cup oil (like canola or vegetable)

  • Optional: nuts for topping (I like pecans)

Preparation

Preheat oven to 350℉.  Lightly oil an 8x8-inch baking pan. 

1. Peel, core, and slice apples thinly and place in a bowl.

2. Sprinkle half of sweetener and cinnamon and all the vanilla extract over the apples.

3. Cook the apples in the microwave for 6-8 minutes on high, they will cook down a lot, and become quite soft, but should still have a slight bite to them.

4. Mix almond flour, ground walnuts, and remaining sweetener and cinnamon together.  Add oil, mix again.  Add apples and stir until combined. 

5. Place mixture in prepared pan and bake uncovered for 25-30 minutes, until nice and golden on top.  Serve with whipped cream or ice cream. 

Optional: before baking, decorate with nuts.
