Umeboshi is the vinegar leftover after pickling Japanese plums. It’s slightly sweet, briny, refreshing, and it perfectly complements ginger and lime in this cocktail. You can find umeboshi in most specialty markets and larger supermarkets. We like Eden Brand Ume Plum Vinegar.
You can easily double, triple, or make a pitcher of this tonic to serve at parties and gatherings.
- Prep Time
- 1 knob of ginger, about the size of a quarter
- Several lime slices
- 2 ounces best quality gin
- 1 tablespoon umeboshi
- 4 ounces tonic water
1. Muddle ginger and lime together in a tall glass.
2. Add umeboshi, gin, tonic water, and ice. Stir together. Serve.
