This pear and ginger sugar transforms and elevates ordinary sufganiyot. Use it as a topping for doughnuts, gingersnap cookies, fruit crisps, babke, or challah.

- 1 cup granulated cane sugar
- 1/2 cup dehydrated pears, optional (found at health food stores such as Whole Foods)
- 1 teaspoon dried ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon ground star anise
Place dehydrated pears in food processor and pulse until coarsely ground. Add remaining ingredients and mix until pears are finely ground and
spices are well incorporated. Divide among small glass jars if gifting, or any airtight container.
