This gluten free Almond Galette is glazed with a fig and onion balsamic reduction. Enjoy any time for a real treat.

- 1 cup almond flour
- 1 egg
- 4 tbsp Extra virgin Olive oil
- 1 tbsp dried rosemary
- 2 medium yellow onions, halved and thinly sliced
- 1 1/2 cups mission figs medium chopped
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 3 tbsp honey (or agave)
- 1/3 cup feta cheese for sprinkling
Position rack to the middle of the oven, and preheat to 300°. In a large bowl whisk the egg, and olive oil. Mix in the almond flour and dried rosemary. Once it is well mixed line a pizza tray with parchment paper. Roll out dough until ½ inch thick. Bake in the oven for 10 minutes.
In a large sauce pan on a medium flame, add the onions, figs, olive oil, balsamic vinegar, and honey. Lightly toss and keep the pan uncovered. Occasionally stirring, let the onions caramelize for about 15 minutes.Top the galette with mixture and sprinkle with feta cheese. You can reheat in oven for five minutes to crisp and lightly melt the feta cheese.
