I love to make caesar with my special dressing, but I wanted to change it up a bit this time and so even though my husband disagreed, I tried it with some thin sliced fennel. Now, he says he doesn't know if he can it without fennel. I love being right.
- 1 fennel bulb, sliced very thin (a mandolin is useful here)
- 2 heads of romaine – cleaned well and torn into pieces
- 1 tablespoon capers, optional
- Caesar Dressing
- 1 cup croutons
Mix lettuce, fennel and capers in a large salad bowl. Toss with dressing and top with croutons. Enjoy.
