My dad made these and we think they are better than potato french fries
- Two large Eggplant
- 1 cup Bread Crumbs
- 6 tablespoon Olive Oil
Peel and then cut eggplant into french frie size pieces. Take a gallon plastic bag and pour in 3 Tablespoons of oil. Add half of Eggplant and toss in bag to coat eggplant with oil. Add half a cup bread crumbs to the bag to coat eggplant. Repeat with secong batch. Spread on cookie sheet, leaving room so that eggplant pieces are not touching. Bake at 400 for 25-30 minutes, turning eggplant pieces occasionally.
