Easy Spaghetti Squash (Squashetti)

Get the fun of spaghetti without all the calories and carbs.  It's also so easy to make, I don't know why everyone doesn't eat this all the time.

  • 1 whole spaghetti squash

  • 2-3 tablespoons extra virgin olive oil

  • 1 medium onion, chopped

  • Kosher salt

  • Freshly cracked black pepper

  • Garnish: chopped parsley


1 Poke holes all over the spaghetti squash with a fork.

2 Microwave for 10-20 minutes depending on how large it is, allow to cool.

3 Cut in half and then remove the seeds. 

4 With a fork, pull out the squash so that it resembles spaghetti. 

5 Chop onion and saute in hot oil (I used garlic oil), put in spaghetti squash and stir it up until it is golden.  Salt and pepper to taste.
