Healthy gluten-free cake from dates, nuts and cinnamon. You can exchange walnuts for almonds, top with coconut, or experiment with other ideas. Just make sure to make a double batch.

- 3 eggs
½ cup sugar
- 1 cup chopped walnuts
- 1 teaspoon cinnamon
¾ cup chopped dates
- Juice of 1 orange
1. Preheat oven to 350°F.
2. In a bowl, combine the eggs with the sugar and mix well.
3. Add walnuts, dates, cinnamon and orange juice.
4. Grease an 8 inch square baking pan and spread mixture evenly in the pan.
5. Bake for 20 minutes. Chill and cut into squares.
