Creamy Olive Oil Polenta

With all the time you saved making the Instant Pot Braised Pot Roast, there is very little excuse not to do a decent side dish and garnish, isn't that right?! You can make this creamy side in your Instant Pot, or you can prepare it stovetop.

Make the chicken stock for this recipe in your Instant Pot and save even more time.

Ingredients

  • 1½ cups cornmeal
  • 5 cups chicken stock or water
  • 3 tablespoons extra virgin olive oil, such as Colavita

  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Preparation

1. Stovetop method: Simmer cornmeal, stock or water, evoo, salt, and pepper in a medium saucepan, stirring often, until creamy and no longer gritty, about 15 minutes.

2. Adjust seasoning with salt and pepper.

3. Instant Pot method: add cornmeal, stock or water, evoo, salt, and pepper to insert for Instant Pot. Set to pressure cooker and set timer for 15 minutes.

4. Adjust seasoning with salt and pepper.
