- 1 pound Linguine, Spaghetti or Thin Spaghetti, uncooked
- 1/4 cup olive or vegetable oil
- 1 cup Chopped onion
- 1 cup chopped carrot
- 1 cup chopped celery
- 2 tbsp. finely chopped parsley
- 1 1/2 tsp. salt
- 1/2 tsp. sugar
- 1/4 tsp. pepper
- 2 16- oz. cans peeled tomatoes
1 In a large skillet, heat oil; add onion, carrot and celery.
2 Cook and stir just until vegetables are tender.
3 Add next five ingredients, simmer on low heat 20 minutes, stirring frequently.
4 Cook pasta according to package directions; drain.
5 . Toss pasta with sauce and serve
