This is a recipe that I got from my mom. Some of my sisters have a crepe maker so they can make them very sleek but mine look more traditional wrapped a la restaurant!
- oil as needed
- salt as needed
- 1 cup flour
- 4-5 whole eggs
- 1 lb. farmer's cheese
- sugar to taste, approx. 1/3 cup
Mix flour, eggs, pinch of salt and pinch of sugar (use immersion blender to get a smooth texture). Fry in hot griddle or skillet (coated lightly with oil) only on one side and then set aside in large plate to cool. you may stack the crepes (or bletlech). You can make these a day ahead and then finish the next day by adding in the cheese mixture.
Mix farmer's cheese with an egg or two and sugar with a spoon. Scoop the cheese mixture with a heaping tablespoon into each crepe and wrap looking like a blintze.
Fry each blintze until crisp and serve with sour cream or jam.
