- 3 large carrots (the bigger the better)
- 1 tablespoon oil
- salt and pepper to taste
Preheat oven to 375.
Peel carrots then slice with a mandolin, food processor or knife. Slice thin and then mix with olive oil and salt and pepper. Spread on cookie sheet in one layer.
Bake for about 40 minutes, flipping them over half way through.
Variation: you can add any herb for more flavor, tarragon goes very well with carrots.
