Caramelized Roasted Fennel Soup

  • 3 bulbs fennel
  • 1 medium yellow onion, sliced 1-4 in thick
  • 3 garlic cloves
  • extra virgin olive oil
  • sea salt and fresh ground black pepper to taste
  • 3 cups chicken broth
  • 1-2 cups soy or almond milk
  • chopped chives for garnish



  1. Preheat the oven to 375 degrees. On a baking sheet mix fennel, onion, and garlic with oil and salt and pepper. Roast for 45 minutes or until caramelized and soft. Put veggies, broth and soy milk in blender or food processor. Heat. Serve topped with chives. Enjoy!
