- 1 large bunch broccoli, chopped
- 11/2 tbsp. oil
- 11/2 tbsp. flour
- 1/2 cup almond or soy milk
- 1/2 cup mayonaisse
- 1 tbsp. onion soup mix
- 3 Eggs
- 1/4 cup cornflake crumbs
1 Bring a large pot of water to a boil, add broccoli and simmer until soft or heat in microwave.
2 Preheat oven to 350. Creat roux in a small saucepan, combine oil and flour then add soymilk, simmer until thickend about 5 minutes.
3 Add mayonaisse, onion soup mix, and eggs to roux. Mix with broccoli and pour into greased loaf pan.
4 Top with cornflake crumbs and bake for 30 minutes.
