Baking eggs in avocados seems to be all the rage, I had to try it for myself. There is a reason everyone is loving them and pinning them, they are delicious!! Low carb and paleo, but also high in protein and good fats. I love food that can be served in it's own biodegradable disposable container too and the avocado holds up well no plates needed.

- 1 avocado
- 2 large eggs
- salt and pepper to taste
- diced tomatoes mixed with cilantro
- sliced jalapeno peppers
- feta cheese, crumbled
Preheat oven to 375.
Slice avocado in half and remove pit. Scoop out a bit of the flesh to make enough room for the egg, save for another use or just eat it.
Crack an egg in a bowl and pour into the avocado, do the same with the other egg. Place avocado on baking sheet, sprinkle with salt and pepper and place in oven until set, about 15-20 minutes.
Remove from oven and serve on its own or with optional toppings. Our favorite is the tomatoes.
