Avocado Egg Breakfast Toast

Avocados are incredibly nutritious; high in fiber and nearly 20 vitamins and minerals. They are also filled with healthy monounsaturated fat, which makes them high in calories, so you will want to watch your portions and what you pair with them.

  • ⅓ ripe avocado
  • 1 slice whole-grain bread, toasted
  • Handful arugula leaves
  • Cooking spray
  • 2 large egg whites or ¼ cup egg substitute, scrambled
  • Red pepper flakes
  • Kosher salt
  • Freshly ground black pepper


1. Using a fork mash and spread avocado on toast. 

2. Top with arugula.

3. Spray a nonstick sauté pan with cooking spray and heat over medium heat. Pour egg whites into the pan and cook while mixing with a spatula until done.

4. Place scrambled egg whites on top of arugula and sprinkle with red pepper flakes, salt, and pepper. Eat immediately.
