Avocado stands in for dairy to make this smooth and creamy treat deliciously pareve.

- 3 avocados
- 1 cup seeded cucumber
- 1 cup coconut milk
- ¼ cup honey
- ½ cup shredded coconut (optional)
1. Blend avocados, cucumber, coconut milk, and honey together. Once blended, mix in optional shredded coconut with a spatula or spoon (not blender) to keep coconut's texture intact.
2. Pour in popsicle molds and freeze.
