Last week I started giving you a fully planned week of dinner ideas. If you are at all like me, you can't eat the same food every week, so here it is again. Let me know how you like my selections.
Monday: These Tofu Fingers are great for kids of all ages, I am sure the adults will enjoy them too. Serve with ketchup for the kids and and easy Romesco dip, made from roasted pepper and almonds, for the grown ups. On the side you can enjoy steamed broccoli and rice.
Tuesday: By now we are usually out of leftovers to take to work for lunch, so this dinner has to do double duty. I find a stir fry is quick to make but also works well the next day. Using cubed tuna in a stir-fry is unusual in a fantastic way. Combined with fresh veggies, edamame and whole-wheat pasta, this dish is teeming with nutrients and fiber. If you are not a tuna person, go ahead and use chicken or turkey cubes instead. Try this Tuna Stir-Fry Over Noodles.
Wednesday: Try this fun recipe for Sausage and Peppers and serve along side your favorite kind of potato.
Thursday: This quick and easy dinner is the perfect meal before the real cooking begins. Rice and Corn Cakes with Black Beans and Salsa.
