Cause challah makes the best stuffing. Unless you prefer cornbread. Which also makes the best stuffing (Honey-Cornbread Stuffing) but pretty much requires that you make homemade non-dairy cornbread. Which brings me right back to challah, which of course you can make from scratch, put those leftover scraps to good use, or buy a few loaves of challah and call it a (Turkey!) day.
Smother that bird in my Rich Porcini Turkey Gravy. Totally ok, BTW, to eat this gravy like a soup, with a spoon.
DO make extra so you can snatch a few straight from the roasting pan.
DO exercise quality control and taste this creamy (you won’t believe it’s non-dairy) mash.
DO NOT scoop a spoonful before serving (however tempted you might be) cause it ain’t pretty to serve this with a portion missing. (See above for pre-Thanksgiving dinner, tasting opportunities.)
The ultimate meringue topped pie should NOT intimidate you. That’s NEVER my intention. If a blow torch scares the stuffing out of you, top with store-bought kosher marshmallows and pop under the broiler for a few.
