Pesach is the ideal time to experiment with non-traditional and healthier wrap options. They taste and look so incredible, I plan to make these all year long for parties, Shabbat meals, and dinners.
You can serve these Lettuce Fajita Wraps with extra sides of salsa or guacamole.
To offset the slight bitterness of red radicchio, you can make a dairy version and add some cubes of Emmental. Walnuts instead of almonds make it even richer. Or you can just skip the radicchio and go with simple butter lettuce.
For a pareve alternative to this recipe, you can fill the endive with egg salad combined with chopped salmon.
