The next time you order a glass of juice, you might be surprised with the colorful options available. Many different fruit and vegetable combinations are being turned into juices. The rising popularity of juice drinks has also led to a whole new category of leftovers, the pulp.
Why Save the Pulp
Juicing can be a fast and easy way to consume more fruits and vegetable. Juices contain the natural liquid, vitamins and minerals from raw fruits and vegetables. The fiber containing pulp is left behind. Repurpose the pulp into another dish, to help meet your daily fiber needs and to retain any nutrients that might not have made it into the juice glass.
How to Make Juice Pulp
Saving the pulp starts with making your own juice. This can be done a few different ways depending on the desired flavor and available tools.
A juicer is a specialized machine that will extract the liquid from produce, leaving the dried pulp behind. If you don’t have this machine, use a high speed blender followed by straining the mixture through a nut milk bag.
To make citrus juices, use a simple handheld or electric juicer with a built in strainer. The pulp is best used immediately after juicing. It can be stored in a sealed bag and refrigerated for a few days or frozen for use in a future dish that will be cooked.
Pulp Recipe Ideas
Juices can be made from a single type of produce (orange or carrot juice) or many different combinations (green juice). The flavor and texture of the pulp will vary depending on the type of produce used. If possible, keep individual fruits and vegetables separated for more versatile use of the pulp.
Use it to thicken soups and stews
Hide inside tomato sauce based dishes (lasagna, shashuka, pizza)
Add vegetable pulp to an omelet
Mix into baked goods (breads, crackers, muffins, oatmeal, pancakes)
Stir into dips and spreads (guacamole, tzatziki, chummus)
Combine with dressing and add to a salad
Boost your favorite smoothie with added juice pulp

Mix leftover cucumber pulp into a flavorful tzatziki sauce. Since most of the liquid went into the cucumber juice, the pulp won’t water down this dip.
Wake up to fresh-squeezed orange juice in the morning and save the pulp for dinnertime, using it to flavor homemade breadcrumbs. This recipe is also a great way to use up challah bread leftovers.
