In the Winter 2014 issue of JOY of KOSHER with Jamie Geller magazine, Levana Kirschenbaum ever-so-eloquently explained the concept of making soup without stock. Her most crucial tip was using assertive vegetables to add flavor. This concept sparked my interest and I challenged myself to create soups using minimal ingredients but packed with flavor.

After making many batches of soup, I am sharing my three favorite combinations. The secret to making all the soups is to cook the vegetables until tender and bright, but no longer than that. Over-cooking the vegetables will eliminate a lot of the natural flavor the vegetables hold, so keep an eye on the cooking times listed in the recipe instructions.
