A Rosti is a Swiss dish of grated potatoes formed into a flat cake and fried....sound familiar?!? It's basically just an oversized latke pancake. This smoked turkey latke was inspired by a traditional rosti for a Chanukah/Thanksgiving combo that is out of this world. You can even make these as smaller latkes by adding 3 eggs and 1/3 cup potato starch or all-purpose flour to bring the potatoes, onions and turkey together.

I love the bright orange color of these latkes. I add grated pumpkin and pumpkin puree to a potato base for my latkes. Without the latke base, grated pumpkin would burn as then sugar content is too high with just pumpkin.

Here is a Thanksgiving/Hanukkah mash up recipe, perfect for this year when they fall out at the same time. Substitute the sage for rosemary, basil, parsley, oregano or your favorite spice. To make flipping the pancake a bit easier, invert it onto a plate, and slide it back into the pan after adding the remaining oil.

And with Hanukkah and Thanksgiving falling on the same day I thought the best idea was a Cranberry Donut with a Cranberry Glaze and it turned out great. Note that these baked donuts taste more like cake since they are not fried, but they are still very tasty.
