Crispy Rice Squares

I first had crispy rice squares at Prime Grill, topped with an assortment of guacamole, spicy tuna and salmon tartar. I finally decided to give a try myself and found that they are easier to make than I expected. A deep fryer would make it even easier, but it worked in a pan too. The sticky flavored sushi rice comes out extra sweet when fried and goes especially well with a spicy topping. I topped with tuna tartar in the picture above, but any of your favorite sushi filings would work.
