Savoy Cabbage and Cashew Slaw

Savoy Cabbage and Cashew Slaw

I am obsessed with slaw. I love the crunch, and favor dressing my slaws with a vinegary dressing for a palate cleansing punch. I pile them on the sandwich for added texture and flavor as well as serve them as a side. I change the slaws around according to mood, season and on-hand ingredients.

Rainbow Coleslaw

I now share my new absolute all-time favorite coleslaw recipe. I will never buy coleslaw again (unless of course I don’t have time to make this!). Variation: Don’t have tofu cream cheese on hand, or don’t care for it? Use tofu sour cream instead. Although if you don’t care for the pareve cream cheese I am guessing the sour cream is off your list too. Easy enough, just use 2/3 cup mayo and call it a day. Also try adding half a red onion thinly sliced for a slight bite.

Kohlrabi and Cabbage Salad with Maple Lemon Dressing

Yes, I grew up eating kohlrabi, also known as a German turnip. It tastes like a mild version of broccoli and has the texture of an apple. I suppose it was part of my childhood diet because it is available year-round— at the grocery store, even. While my mother prepared it simply—sliced and drizzled with lemon juice—I prefer a slightly more interesting take, paired with cabbage and tossed in a delicious sweet-tart dressing.

Hot Dog Topped with Asian Slaw

Hot Dog and Slaw Topper

We call this our 'Slaw Dog'. Usually I like coleslaw accompanying my hot dog, but this time I decided to take a risk and mix the two together. The scallions will add a sharp flavor to your dog, while the ramen noodles will give you that extra crunch you’ve been waiting for. Adding an Asian sesame dressing will give your hot dog some sweetness and tang.

Burger with Avocado and Corn

Father’s Day is coming up. I look forward to hosting a backyard barbecue for my dad on a sunny, cloudless day. Hubby is grilling. I sit poolside, sipping a pina colada as the kids splash around. After the party’s over, I’ll lounge a while with a novel.
