Smoked Turkey Rosti Latke

A Rosti is a Swiss dish of grated potatoes formed into a flat cake and fried....sound familiar?!? It's basically just an oversized latke pancake. This smoked turkey latke was inspired by a traditional rosti for a Chanukah/Thanksgiving combo that is out of this world. You can even make these as smaller latkes by adding 3 eggs and 1/3 cup potato starch or all-purpose flour to bring the potatoes, onions and turkey together.

I find Idaho potatoes make the best potato latkes. I prefer to leave them unpeeled when making latkes, saves a bit of work and let’s us get some added fiber. This recipe is a take off the standard Chinese scallion pancakes, made with Idaho potatoes and cut into pieces with a nice dipping sauce. Use a non stick pan and you will only need a tablespoon of oil to make this batch.

Mashed Potato and Kale Latkes

It is best to use leftover mashed potatoes for this, but if I was going to start from scratch, I would make my favorite potato skins, by microwaving the potatoes, scraping out all the flesh and then baking the skins. Turn the flesh into mashed potatoes by adding your choice of water, milk or broth and mashing well. Add salt to taste. Now you can turn them into these gorgeous, flavorful, and vitamin enhanced latkes.
