Vegetable Fried Quinoa

When I discovered Kosher for Passover soy sauce I discovered a whole new menu of foods. I love cooking chinese and this version of vegetable fried rice using quinoa is great for Passover and all year round. Add tofu if it is not Passover. It is best to use day old quinoa for this, but works either way. Reheats well.

Orange Beef and Broccoli

Last time I made this my husband for some reason picked up Stir-Fry Meat, which was beef cut into tiny and I mean tiny cubes. So I realized I had to cut the broccoli tiny too so they would work and I have to say it was amazing. It is not a must and the picture here shows it big, but if you have the desire to cut your meat and broccoli small you should know the results are worth it.
Chinese Quinoa Cakes

When you have leftovers, turn them into fritters. These Quinoa Cakes are so amazing. It was really fun making Chinese Egg Rolls for Passover last year, but for a lot of people it is not easy, but this recipe offers a fried appetizer that goes well with duck sauce and is easier and healthier.
