It benefits from the amazing and well known flavor combination of these two fruits, but there is an added bonus. Make sure to note the heavenly aroma that will fill your kitchen as these bake, as well as the wondrous smell that will fill your nostrils as you take a bite of the hot muffin.

This would work with diced prune plums or a combination of diced prune plums and peaches. Dried buttermilk powder and dried egg whites are staples in my kitchen; if preferred, you can use liquid buttermilk, and the white of an egg, and omit the water. The photo shows one wrapped and one unwrapped muffin. Another standard staple in my freezer are individually wrapped and labeled muffins for an easy, portable snack.

Obviously, these are a perfect fall and winter muffin recipe, but truthfully, butternut squash is available all year round, so you can make these delicious muffins anytime you fancy them. They work beautifully with canned pumpkin puree too, so if you prefer pumpkin, or if you are looking for an easy way out- go for it! The taste of the squash is not very pronounced in this recipe, but it gives the muffins a beautiful color and an incredibly moist and light texture.
