Spinach Pakora

This may not be totally authentic pakora, but it is really good. One of my kids favorite snacks or side dishes, this Spinach Pakora is a hit every time. Pakora is an Indian appetizer made by mixing vegetables with chickpea flour, the flour gets sticky when mixed with water so there is no need to add egg, that is how it is naturally gluten free and vegan. It is usually deep fried, but I make them into little patties so I can pan fry them. Give it a try, you will not be sorry.
